Lamb Culotte With Salsa Verde

ingredients

You will need:

• 600g Welsh lamb culotte

• Salt and black pepper

• 4 handfuls of mixed herbs such as parsley, tarragon, basil and mint

• Olive oil

• 1 tbsp. Dijon mustard

• 3 tbsp. white wine vinegar

• 4 anchovy fillets

• 2 tbsp. capers

• 1 handful of gherkins

• Grated rind of 1 organic lemon

Method:

Lamb:

Season the lamb culottes with salt and pepper.
Brown them in a pan with a little olive oil.
Finish roasting the culottes in the oven for 10-15 minutes. at 180 degrees.

Salsa verde:

Put herbs in a blender together with 1½ dl. olive oil, mustard, vinegar, anchovies, capers, gherkins and lemon zest and mix it together to make a coarse salsa.
Season to taste with salt, pepper and possibly more lemon juice.
